Dried beans are cheaper and often taste better than canned beans – quick-soaking dried beans is a genius time-saving technique that means you never again have to think “darn, I forgot to put the beans on to soak.” I tend to batch-cook dried beans in the pressure cooker using this technique and freeze what I don’t need to save time another day.
