For the nights when you just don't have time to prep veg, this super-speedy soya bolognaise is a quick, cheap and popular way to feed the family.
Ingredients
125g of dried soya mince
200g of tomato puree (one tube)
2 tbsp oregano
1-2 carrots
1-2 cloves of garlic, peeled (optional)
Slug of red wine (optional)
A tsp of bouillon powder (optional)
To serve:
Pasta (spaghetti or fusilli works well with this sauce - most dried pastas are vegan but beware fresh pastas usually contain egg)
Nutritional yeast or Vegan Parmesan (optional)
Instructions
Fill and boil the kettle.
Put the dried soya mince, tomato puree and oregano into a saucepan. Grate the carrot(s) directly into the same pan.
Pour on just enough boiling water to cover the ingredients. Leave for a minute or so until the soya mince has absorbed the water and swelled up. Add a little more water if necessary.
(at this point, pour the rest of the hot water into a separate pan, bring to the boil, and cook the pasta according to the instructions on the packet.)
Stir well and turn on the heat. Add the garlic cloves, red wine and bouillon powder, if using.
Simmer for 8-10 minutes.
Serve with pasta and top with a Vegan Parmesan if desired - and perhaps a green salad on the side?
