Apple-Raspberry Mini Turnovers - 100% Plant-based

This recipe is a lovely one to get the kids involved with, and is based on my translation of a really easy recipe by Marie LaforĂȘt.
Ingredients
  • Jus-Rol Puff Pastry (the one in the green packet), defrosted
  • Apple puree
  • Raspberries (fresh or frozen)
  • Ground cinnamon
  • A little soya milk (or your preferred vegan-friendly milk alternative)
Instructions
  1. Use a rolling pin to roll out the pastry - you want it reasonably thin, say about 2-3 mm thick. Use a large round pastry cutter (or a small bowl and a knife) to cut out discs of pastry. Form the remnants into a ball and roll out again until you have used all the pastry (try to be as efficient as possible with your spacing so as to avoid re-rolling the pastry more than necessary - it's quicker, and the pastry doesn't like it).
  2. Move the pastry circles onto baking parchment, on a baking tray. On to half of each pastry circle, put a teaspoon of apple compote, one raspberry, and a tiny pinch of cinnamon.
  3. Fold each pastry circle over to create a semi-circular pastry, and seal the edges by pressing all the way round with a fork. Prick the top of each one with a fork, and paint with a little soya milk.
  4. Bake for 20 minutes on 180C/Fan 160C/Gas #6, until the pastry is golden. Leave to cool.
Notes
Apple puree or compote is widely consumed as a dessert on the continent but isn't such a familiar product in the UK, except as baby food.
However, it is available, you just have to know where to look: I found a large jar of organic apple compote in my local health food shop, and Waitrose/Ocado stock Clearspring Organic Apple Puree. Alternatively you could always use something like HiPP Organic Simply Apples or Cow & Gate 4 Month+ A Taste of Apple - you want something that is 100% apple, with no added sugar or other ingredients, except perhaps asorbic acid (Vitamin C). Or you could make your own of course - peel and chop the apples, put them in a saucepan with a little water, cover and cook for 6-8 minutes until tender, then puree until smooth.
