Choc-Chip & Cherry-Almond Quinoa Loaf Cake

- 200g plain wheat flour
- 200g wholemeal flour
- 100g sugar
- ½ tsp bicarbonate of soda
- 2 tsp baking powder
- ¼ tsp salt
- 300g cooked, cooled quinoa
- 280 ml your preferred nondairy milk
- 50 ml mild-flavoured oil
- 1 tsp natural almond essence
- 1 tsp natural vanilla essence
- 50g dried cherries
- 80g vegan-friendly chocolate chips
- Preheat the oven to 180C/Fan 160C/gas mark 4. Line a loaf tin with baking parchment - or alternatively lightly grease with vegan-friendly margarine.
- In a small bowl, combine the flours, sugar, baking powder, bicarbonate of soda and salt.
- In a large bowl, whisk together the quinoa, milk, oil and almond/vanilla essences.
- Add the dry ingredients to the wet a bit at a time, mixing after each addition until all the flour has been incorporated.
- Fold in the dried cherries and the chocolate chips, then scrape the mixture into the prepared loaf tin.
- Bake for 60 minutes.
